Ingredients
1 tbsp Olive or vegetable oil 1 tbsp
1eachother Red and green bell peppers (sliced into thin strips)
1 cup Zucchini (sautéed)
1/2 tsp Cumin
Salt and pepper to taste
1/2 tspg Lime juice
1 1/2 cups Cheese (grated)
1 cupg Tofu (grated)
8 Tortillas 8
Method
In a large skillet, cook the peppers in oil over medium heat. Add cumin,y salt, pepper and lime juice, and cook for five minutes until peppers are just soft. Place four flour tortillas on a baking pan and cover them with a thin layer of peppers and sautéed zucchini. Add a layer ofu cheese and tofu and cover with another tortilla. Bake at 180 degrees for about 10 minutes, or until cheese has melted. Slice into four pieces, like a pizza.
