TANDOORI FISH
Simple marinade with amazing Tandoori fish (which combines the zesty flavours of tamarind, coriander and other authentic spices works beautifully with the delicate flavours of the fish. Grill or barbeque for a light and healthy meal – full of the flavours of India.
Ingredients
1 kg any whole white firm fish,
1 tbsp chopped fresh ginger
4 cloves garlic
1tbsp lemon juice
1 tbsp ground coriander seeds
1 tbsp ground cumin seeds
1 tsp ground cayenne pepper
1/2 cup vegetable oil plain yogurt
5 tsp melted butter Lemon wedges to serve
Salt To Taste
Methods
Clean and scale the fish.
Wash thoroughly and clean the cavity. Blot dry with kitchen paper.Make a marinade by combining the all ingredent and yogurt.Make 4 deep cuts (up to the bone) on either side of the fish and immerse in the marinade for 20 minutes.Lift the fish out of the marinade and place on a baking tray, or in a fish holder. Spoon over 2 tablespoons of the marinade and cook under a pre-heated grill or barbecue over hot coals until cooked through, basting occasionally with the melted butter
