THAI GINGER -CURED PRAWNS WITH MANGO
40 large prawns, peeled and cooked
2 tsp root ginger, grated
2 garlic clove, chopped
2 red chilli, deseeded and chopped
2 tsp fish sauce
2 tsp sugar
juice of a lime
2 mango, peeled
Mix 40 large peeled and cooked prawns with grated root ginger, chopped garlic clove, deseeded and chopped red chilli, sugar, fish sauce and the juice of a lime.
Chill for 30 minutes to marinate. Toothpick each prawn with a small chunk of peeled, ripe mango. Top with some fresh coriander just before serving.
