SUMMER MIXED BEAN SALAD



High in fibre and lean protein ,this is a perfect meal post -workout

Ingredients 

200 g mixed beans
150 g palm hearts,chopped
6 tbsp avocado ,chopped
450 g chicken skewers (marinated in youghourt and mustarad and left overnight )
2 lemon wedge
4 tbsp olive oil

For the marinade 

600 ml whole- milk yoghurt
8 tbsp english whole -grain mustard
juice of 2 limon

Method 

Combine all the ingredients for the marinade.
Add de chicken and coat thoroughly .Cover and place in the refrigerator overnight.
Preheat the oven to 190 C
Brush the skewers with a little olive oil and place on a barbecue or under a hot grill for at least seven minutes .
Transfer the skewers to the oven and cook for a further four minutes.
Place the lettuce on a plate .Top with the mied beans avocado and palm hearts
Remove the skewers from the oven and place on top
Drizzle with olive oil and serve
