Booza is the arabic word for ice cream

Ingredients -for approximately 2 L

1.8 kg potatoes
1 tbsp salt
1 tbsp lemon salt
225 g tahina paste
400 g yougurt
20 ml olive oil


Roast the potatoes for an hour at 175 C.Once cooked ,allow to cool
Remove the skin of the potatoes and place in a blender adding yoghurt ,tahina paste ,salt and lemon salt and blend it for 4 -5 min
Remove from de blender and transfer to an ice cream cointainer .Place in the freezer to set at least 12 hours
Once frozen place the mixture in an ice cream machine to blend to become smooth
